July ~ Getting Creative with Peaches

An abundance of fresh, juicy fruits, locally harvested and in their prime, is a summer treat that everyone looks forward to ~ carnivores, vegetarians, vegans and pescatarians alike. The variety of tastes and textures is so extensive, from berries, to pineapples, melons, kiwis and stone fruits, to name just a few, that there is bound to be something for everybody to enjoy. Added bonus: they are also really good for you!

Apart from just snacking, or tossing them together in a fruit salad, fruits can be turned into desserts, blended in smoothies, added to mixed drinks, made into ice cream, or even grilled or baked. The possibilities are limited only by your imagination.

Imagination is something that inspires chef Joseph’s original creations every day, and his summer menu features a grilled peach salad. “They not only look pretty on the plate,” he says, “but grilling adds complexity, because it creates firmness and caramelizes the sweetness of the peach. That pairs well with the other ingredients; local greens, pistachios, crumbled feta or sheep’s cheese.”

Unlike other salads, this one does not come with a dressing. As Joseph explains, “A regular vinaigrette dressing would overpower the flavor.” Instead, the finishing touch is just a sprinkling of olive oil, and balsamic vinegar. He goes on to point out that this combination pairs well with almost any fruit, together with the addition of sour cream and brown sugar as a dessert. “This is the time to use top quality olive oil and the best vinegar, with no artificial additives, preferably from Modena, in Italy,” he says, “not only because it tastes better, but because it’s emulsified, so it’s thicker and holds well.”

The most celebrated peaches come from Palisade, a small town on Colorado’s western slope, that’s been celebrating the region’s famous fruit by hosting an annual Peach Festival for the last 57 years. If you would like to take a trip to check it out, this year’s will be held on August 15th and 16th. Known for their exceptional sweetness and juicy texture, the distinct flavor profile is the result of a combination of warm days, cool nights, and the area’s mineral-rich soil. The season typically runs from late July through September, and during that time it's not uncommon to find them being sold here by roadside vendors.

These peaches are also an ideal fit for Joseph’s in-house ice cream. “They really do have a special taste like no other,” he says, “and although we have our own way of making it here in the restaurant, anyone with an ice-cream maker could use them in a standard recipe at home.”

Prize-winning wines from HUNEEUS, an independent, family-owned winery, featuring a 2021 vintage that earned 100 points in Wine Spectator. Accompanied by five of Joseph’s exceptional, mouth-watering courses, seating is limited, so do book early, to enjoy a truly memorable evening.
